White Dragon Pearls

Ingredients: chinese white tea

1 pearl (approximately 3–4 g)

8–10 oz water

180–190°F

3–4 minutes

Allow the pearl plenty of room to open fully as it steeps. A larger basket-style infuser, teapot, or gaiwan works especially well.

For iced tea: Use approximately twice the amount of tea.

MULTIPLE INFUSIONS:

Don't discard that pearl after the first cup! White Dragon Pearls are particularly well suited to multiple infusions.

Re-steep the same leaves 3–5 times, adding approximately 30–60 seconds to each subsequent infusion. The pearl will continue to unfurl through the early steeps, with the flavor gradually evolving as more of the leaf opens.

GAIWAN PREPARATION:

1–2 pearls (approximately 4–8 g)6 oz water185–190°F

Begin with an infusion of approximately 20–30 seconds, then strain completely. Re-steep several times, gradually increasing the infusion time as the leaves continue to open.

2 oz (57 g) White Dragon Pearls

Approximately 14–19 pearls, with each pearl making one 8–10 oz Western-style serving and capable of multiple infusions.

Packaged in resealable, biodegradable rice paper bag.  Tins or jars may be available sold separately.
