  • THE BREW

    We’re particular about how we brew our teas, as are most tea enthusiasts.  And for each tea enthusiast, there is a favored way to brew.  This is mostly according to your particular taste. Let’s begin…….. It all starts with your TEA!!!! I know, strange right? You want to begin with a good quality tea. Your brewed concoction will only be as good as the tea you select. We use only LOOSE LEAF tea (no pre-bagged tea for us). Why? Because pre-bagged teas generally (notice I said generally, there’s an exception to every rule) contain “dustings” or “fannings” rather than full leaf. The dustings and fannings are what’s left after the premium leaves have been sorted out. It’s the bottom of the barrel. And if it’s not the “dustings” it may be a later harvest in the season which yields a lower quality of tea leaf. So go with loose leaf every time. But the tea you select is not where it ends.  Let’s look at the Water you’re using next.  There are differing opinions about this and always seems to be a huge debate about using FILTERED vs DISTILLED water. Each argument has valid points.  But here’s our take on the subject.  We prefer DISTILLED water because it is “empty” water.  Meaning, it can extract more of the tea constituents. There is nothing in the water to prevent the best infusion.  No minerals, no sediment, no added chemicals, nothing.  With that said, just make sure your water is not just plain old tap water.  It should, at the very least, be filtered.  Some people prefer spring water.  Bottom line, if your water does not taste good or is of poor quality it will translate into a poor tasting cup of tea. It's all in personal preference. I've been drinking distilled water for so long that anything other than that just tastes funny to me. So as we usually do, we encourage you to experiment and figure out what your own personal preference is. ​Next, let’s look at how much tea you are using.  Ideally, you would weigh out your loose leaf tea.  2-3 grams per 8 oz cup of water is what you will want to use.  This equals approximately 1 teaspoon.  Most will use a teaspoon just because it’s easier than weighing it out.  Should you want a stronger infusion, use a little more (don’t steep longer…..more on that later).  So, 2-3 grams (1 teaspoon) per 8 oz water. Temperature is another important factor in making the perfect cup of tea.  Each type of tea should be steeped at the correct temperature.  All of our teas have suggested steeping temperatures on the label.  As a general rule of thumb……Black teas steep at approximately 212° F, Green teas at 175° F, White teas at 175° F, Oolong teas at 195° F, Blooming presentation teas at 212° F, and finally Herbal/Mate/Rooibos at 212° F.  There are tea kettles that have these temperature settings already built in and with the press of a button you can get the correct temperature every time.  We use these types of kettles in the store.  It takes out the guesswork Timing…..it’s all about the timing.  If you steep your tea for too long it will become bitter.  The amount of time will once again be determined by the type of tea you are brewing up.  Black teas steep for 3-5 minutes, Green teas for 2-3 minutes, White teas for 2-3 minutes, Oolong for 2-3 minutes, Blooming presentation teas for 4-5 minutes, Herbal/Mate/Rooibos for 5+ minutes.  We give guidelines for each of our teas.  This timing is what is referred to as “Western” style tea making.  More on this in another article. So, to recap……Tea Quality + Water Quality + Tea Amount + Proper Water Temperature + Proper Steeping Time = Your Cup of Tea!!! Of course, this is the simple and quick explanation but I think you get the picture. Below is our basic Tea Brewing Guide.

  • YELLOW TEA

    Yellow Tea is considered to be a very rare tea due to where it is grown, how it is harvested and the intensive processing it goes through. It is only produced in China. Care should be taken with purchasing from reputable vendors – some poorer quality green teas are being passed off as yellow tea. Yellow Tea gets its name from the straw, yellow, colored liquor it produces. Its flavor is smooth & sweet, clean & floral without the grassy flavor of green tea. Yellow tea (huang cha) is produced in much the same way as green tea.  Except there is an additional step included.  It is also partially oxidized through this process.  This additional step is called Men Huang which means “sealing yellow”. We currently stock ONE Yellow Tea, Golden Dragon. This particular tea is nicknamed “10 degree yellow tea” by tea artisans as it has a unique minimal 10% fermentation. The infusion it produces is a deep golden color. It has a delightfully floral flavor and is similar to that of an Oolong (floral with a clean, fresh mouth feel). To prepare Yellow Tea: 1 tsp ~ 8 oz water ~ 175 F ~ 1-3 minutes May be infused multiple times with longer steeping times with each infusion.

  • PURPLE TEA

    Purple tea is a unique variety of Camellia sinensis, the tea plant, that is characterized by its distinctive purple-colored leaves. It is primarily grown in certain regions of Kenya, particularly in the Nandi Hills and Mt. Kenya regions. The purple color of the leaves is due to higher levels of anthocyanins, which are antioxidant compounds also found in foods like blueberries and purple grapes. Purple tea is often touted for its potential health benefits, attributed to its high antioxidant content. These antioxidants are believed to help protect the body from oxidative stress and inflammation, potentially offering various health-promoting effects. In terms of flavor, purple tea can vary, but it often has a smooth and mellow taste with floral undertones. It's typically processed as a specialty tea, with production methods similar to those used for green tea or oolong tea. Purple tea has gained attention in recent years among tea enthusiasts and health-conscious consumers due to its unique appearance and potential health benefits. However, it's still relatively rare compared to other types of tea, and availability may be limited outside of regions where it is grown. We currently stock a Kenyan Purple Whole Leaf tea but it is in a limited quantity while supplies last. To prepare Purple Tea: 1 tsp ~ 8 oz water ~ 175 F ~ 2-3 minutes

  • CHAI SPICED SCONES

    I don’t know about you, but I looooove some warm freshly baked scones. They’re one of my favorite treats. And add some Chai spice to them…..Mmmmmm….perfect. Serve up with a fresh brewed cup of Chai or a Chai Latté. Chai Spiced Scones These chai spiced scones have a deliciously warming suble Chai flavor. Perfect for sharing with a friend or two. Print Recip Prep Time 10 minutes mins Cook Time 35 minutes mins Total Time 45 minutes mins Servings 12-15 (depending on size of scones) Course Breakfast, Dessert Equipment Tea Steeper Sauce Pan Pastry Cutter Rolling Pin Whisk Mixing Bowl Baking Sheet Silicone Brush Ingredients Scone Batter 4 Cup Flour all purpose 1 1/2 Tbsp Baking Powder 1/2 Cup Sugar 1/2 tsp Salt 8 Tbsp Butter not melted 2 Tbsp Classic Chai Loose Leaf Tea or Spiced Rooibos Chai Loose Leaf Tea 1 Cup Milk 2 Eggs Egg Wash 1 Egg Yolk 1 tsp Water Vanilla Drizzle 4 Tbsp Powdered Sugar 1 Tbsp Milk 1/2 tsp Pure Vanilla Extract Instructions Scones Preheat oven to 275°F Heat Milk to simmer in sauce pan with lid Steep tea in milk 10 minutes (cover to keep hot) Strain off brewed milk/tea Mix all dry ingredients for Scones in large bowl Cut butter into dry ingredients Add brewed chai milk and eggs Mix until blended well For extra flavor, add powdered Chai blend to batter (see notes below) Lightly flour surface and roll out dough to approximately 1" and cut into desired shape Place onto lined baking sheet Mix Egg Wash ingredients with fork and brush over tops of scones Bake in preheated oven at 275°F for 35 minutes (or until lightly browned) Vanilla Drizzle While Scones are baking, mix all Vanilla Drizzle ingredients until smooth When Scones are done baking, remove and allow to cool Add Vanilla Drizzle over Scones Enjoy!! Notes Optional: Add in some raisins or mini chocolate chips for a little extra umph. Powdered Chai Blend – Grind 1 Tbsp of Chai Tea (or Spiced Rooibos Chai) into a fine powder. Alternate Drizzle Ideas: You can easily change up the drizzle flavor by adding cocoa powder or flavor syrups. Toppings: Sprinkle cocoa powder or Chai Powder over top We have a few different Chai Loose Leaf Tea variations to choose from. Classic Chai, Masala Chai, White Chai, Sweet Pu'erh Chai, Spiced Rooibos Chai, Chai Spice 1, and Chai Spice 2 (Chai 1 & Chai 2 are just the Chai spices with no tea leaves or Rooibos components)
