Shou Pu'erh

Ingredients: 100% chinese pu’erh (Yunnan province)

1 tsp (3 g) 8–10 oz water 195–212°F 2–4 minutes

For iced tea: Double the amount of tea leaves.

Gaiwan Preparation

10 g tea 6 oz water 212°F

Rinse the leaves briefly with hot water and discard the rinse. For the first infusion, steep for 10–20 seconds and strain completely. Re-steep the same leaves several times, adding approximately 5–10 seconds to each subsequent infusion.

Shou Pu’erh is especially well suited to multiple steepings. As the leaves continue to open, the flavor may evolve from deep and earthy to increasingly smooth, mellow, and nuanced with subsequent infusions.
